Most of us enjoy drinking wine by itself, but when the right wine is paired with the right food it will stand out more. Certain foods complement certain wines and they actually make them taste better. The perfect wine and food pairings set the stage for an unforgettable dining experience. For an amateur, pairing food with the right wine can seem a bit tricky but with a little direction and practice it is something that everyone can do.

It’s not a bad idea to look for some help when you first start out pairing wine and food. There are plenty of inexpensive books that you can buy to help you get started. I actually bought one called The Complete Idiot’s Guide to Wine and Food Pairing for under $20 and it was definitely worth it! Although you may be familiar with basic food and wine pairing concepts, such as light foods should be paired with light wines and heavier meals should be paired with heavier wines, there are certain concepts that are not totally set in stone. I would suggest doing a little reading about wine and food pairing because the pros will give you a better understanding of these exceptions. Another great food and wine pairing guide called What to Drink with What You Eat: The Definitive Guide to Pairing Food with Wine, Beer, Spirits, Coffee, Tea – Even Water – Based on Expert Advice from America’s Best Sommeliers is also a great read and it came highly  recommended by one of the wine clubs that I belong to.

Should You Use a Wine and Food Pairing Chart?

Nowadays it seems that things have moved from the white with fish, red with meat rule. Food changed, wines have changed. This doesn’t mean that anything goes because a bad clash can spoil a meal completely. However, simply using a food and wine pairing chart shouldn’t be the only resource that you use. You don’t want to miss out on great pairing just because it wasn’t on a chart. For example, pan-fried tuna goes extremely well with an Oregon Pinot Nior; even salmon and Merlot works.

The first basic rule to follow when paring wine and food is to balance the weight of the food with the weight of the wine. What does this mean? Here is an example, you wouldn’t want to pair a light Grenache with a rich vension stew; it simply wouldn’t stand up. However, put a bold Bandol with the venison stew and you have the perfect match. The more body the dish has, the bolder the flavor, the bolder the wine must be to stand up to it.

It’s hard to go wrong with a classic steak dinner, especially when you add a twist: compound butter. This one uses just two extra ingredients, anchovies and lemon juice, but the added depth of flavor is profound. It makes a great meal, along with potatoes and greens, and it matches well with a refined Cabernet, like the Wine of the Week, below.

Hanger Steak with Anchovy Butter

2 pounds trimmed hanger steak (skirt or flank steak make good substitutions)

Kosher salt to taste

2 tablespoons vegetable, peanut or canola oil

4 tablespoons unsalted butter, room temperature

1 teaspoon lemon juice

4 anchovy fillets, rinsed and minced into a rough paste

1. Generously salt both sides of the steak. Heat the oil in a large heavy-bottomed sauté pan over medium-high heat. When the oil is hot, sear the steak for about 4 to 5 minutes on each side. (8 minutes total will get you to rare; 12 minutes for medium.)

2. While the steak is cooking, mash the pasted anchovies and lemon juice into the butter. With about 1 minute left of cooking time, place tablespoon-size knobs of the anchovy butter on top of the steak and let them melt. Flip the steaks to coat them in the butter, and finish cooking. Remove them from the heat and place on a cutting board to rest for 5 to 10 minutes.

3. Slice the steak across the grain and serve immediately. Serves 4.

Cooking tip: Add capers, garlic or chopped parsley to the mashed butter for even more flavor.
